How to Mke Seared Ahi
Prepare your prep area by setting up an area for the fresh ahi, sesame seeds, and ginger.
Lightly spread ginger (and wasabi powder if desired.)
Coat the top and bottom in sesame seeds. Cook in hot oil in a frying pan.
Cook approximately 30 seconds on each side. Use the above photo as a guide. (If you don’t like seared ahi feel free to cook it all the way through.) Remove the ahi from the pan and slice into small pieces for an appetizer or leave as steaks.
Cook the rice and set aside when done. Meanwhile, add equal parts of soy and maple syrup. Add the ginger.
Heat over medium heat to reduce in half. Before it starts to boil, turn down the heat and continue to stir. Watch carefully so it doesn’t;t burn or overflow.
Place about 2 TBL rice in a shot glass (about 1/3 full.
Top with the small pieces of ahi.
Top with a teaspoon or so with the Maple Ginger sauce.
Top with lightly chopped green onions. Serve.
Yield: 24 - 30 shot glasses for appetizer
