What is cloud bread?

Cloud bread is, as the name implies, light and fluffy bread baked into the texture of a cloud. Though if I can be technical, it’s really more of a soft baked meringue as there are no real “bread” ingredients used. This means it’s also incredibly low in carbs, gluten-free, and suitable for a keto diet.

Here’s why it’s one of my favorite bread recipes:

  • Have it how you like it. I give you the base recipe plus a handful of equally delicious flavor combinations so you can make it different every time.
  • Surprisingly versatile. For how delicate this bread is, it’s just as versatile as no yeast bread. Turn it into low-carb sandwiches, breakfast toast, or cloud pizza. The options are endless.
  • Diet-friendly. Like cottage cheese bread, if you’re looking for a low-carb, low-calorie bread recipe that’s nutrient-dense, this bread ticks all the boxes.

Ingredients needed

Just 4 albeit unique ingredients are all that’s required to make this cloud bread recipe. Here’s exactly what you’ll need:

  • Eggs. Use eggs at room temperature and separate the egg yolks from the egg whites.
  • Cream of tartar. Technically optional, though I highly suggest using it to help stabilize the eggs.
  • Salt. Just a dash to add flavor.
  • Mascarpone cream cheese. Softened and preferably full-fat. I’ve also tried this recipe with regular cream cheese, creme fraiche, and dairy-free cream cheese, and each works wonderfully.

How to make cloud bread

Step 1- Prep work. Preheat the oven to 285F/140C and line a baking pan with parchment paper.

Step 2- Separate the eggs. Separate the egg whites and yolks into separate bowls. Add cream of tartar and salt to the egg whites. Using a hand mixer or stand-mixer, whip the whites until stiff peaks form. To the egg yolks, add the mascarpone cheese and whisk to combine.

Step 3- Make the batter. Add the egg yolk mixture to the egg white mixture and use a silicone spatula to carefully fold the two together.

Step 4- Bake. Spoon the batter into 12 circular discs onto the prepared baking sheet. Bake for 25-30 minutes until golden. Let the bread cool on the baking sheet for 10 minutes, then transfer the bread to a wire cooling rack to cool completely.

Tips to make the best recipe

  • Use room temperature ingredients. I know I say this with every baking recipe, but I especially mean it with this one! The colder your ingredients are, the longer it will take to combine them, and the more air you’ll lose in the bread.
  • Fold, do not stir. When combining the egg whites and yolks, you’ll want to be careful not to overmix. Otherwise, you’ll end up with dense, flat bread.
  • Keep the eggs separate. Even the tiniest bit of yolk in the egg whites can prevent them from forming into stiff peaks– ask me how I know!
  • Add food coloring. The way I see it, we’re already testing the boundaries of bread, so we might as well go big or go home and add a few drops of your favorite food coloring.

Flavor variations

I really enjoy this keto cloud bread as is, but to make things interesting, here are some fun flavor combinations:

  • Cheese- Sprinkle 2-3 tablespoons of mozzarella or cheddar cheese on top of the cooked bread. Place back in the oven for a further 2-3 minutes.
  • Sesame- Sprinkle 1 tablespoon of sesame seeds over the mixture before baking.
  • Italian- Add dried Italian mixed herbs and garlic powder.
  • Everything- Fold through 1 tablespoon of everything but the bagel seasoning and ½ tablespoon on top of each portion of the bread.
  • Chocolate- Fold through ¼ cup of cocoa powder and 2 tablespoons of powdered sugar into the egg yolk mixture.
  • Ranch- Sprinkle 1 ½ teaspoons of ranch seasoning into the egg yolk mixture.

Storage instructions

To store: Leftover cloud bread can be stored in an airtight container in the refrigerator for up to 5 days.

To freeze: Place the bread in a freezer-safe container and freeze for up to 2 months. Let the frozen bread thaw overnight in the fridge before reheating.

To reheat: Reheat leftover bread in your toaster at the lowest setting or in the air fryer at 325F for 1-2 minutes.

Frequently asked questions

Is cloud bread good for you?

Cloud bread is high in protein and low in carbs and calories, making it a healthy addition to any diet, especially if you’re gluten-free or keto.

What does cloud bread taste like?

Plain cloud bread tastes a lot like egg, as this is the main ingredient. If you’re not a fan of the “egginess,” you can add salt, white sugar, or spices to change the flavor.

Why is my cloud bread not fluffy?

If your cloud bread is not fluffy, it’s likely because the egg whites didn’t form into stiff peaks or too much air was whipped out when the egg whites and yolks were combined.

FAQs

Why is my cloud bread not fluffy? ›

First, you might be over beating your egg whites, which prevents your cloud bread from having that fluffy texture. You'll know if you've overdone it if your egg whites look wet or grainy, she says. Spend With Pennies recommends beating the egg whites on high speed with a mixer just until they form stiff peaks.

Why did my cloud bread flatten? ›

If the whites don't get “stiff” enough, your cloud bread will spread and be flat. The peaks are stiff when they “stand up” when you hold the beaters up (see my picture above). They also should not move or slide out if you tilt or invert the bowl. Traces of fat will prevent your whites from whipping.

Why is my cloud bread mixture runny? ›

Don't over beat! If you meringue starts to look grainy or really wet, it means your egg whites have been over-beaten and your cloud bread won't be fluffy.

Why won't my cloud bread peak? ›

Be extra mindful of how you whip the egg whites. This is the most critical part of any cloud bread recipe. Without stiff peaks, your cloud bread won't have any body and will go flat, says Spend With Pennies. If you're having trouble, try separating your eggs when cold and then let the whites sit out on the counter.

What is the trick to fluffy bread? ›

Add Milk

To make your bread soft and fluffy, another trick used by commercial bakers is replacing water with milk. Milk has fats which make bread softer.

What ingredient makes bread more fluffy? ›

Starch helps the dough by trapping the gas from the yeast in the dough and makes the bubbles stronger. This helps the bread to rise and be lighter and fluffier.

Why does cloud bread taste bad? ›

Sadly, the awful taste will bring you right back down to Earth. Sweet cloud bread is meringue. It's not like meringue, it is meringue, rebranded. Both recipes call for whipped egg whites with sugar, and sometimes a stabilizer, like an acid or a starch.

Does cloud dough go bad? ›

Aside from being easy to make, cloud dough is also easy to store. In an airtight container, cloud dough can last months – and if the mixture starts to dry out, just add in a little more baby oil.

Do you need cornstarch for cloud dough? ›

Cloud Dough – 2 Ingredients! Make some incredibly cool cloud dough at the art center today. This easy no-cook dough requires just 2 ingredients: cornstarch and hair conditioner. Easy enough!

How do you make cloud dough better? ›

Start mixing the cloud dough with your hands once it's too hard to get it smooth with a spoon. Scrape the dough out onto a work surface and knead it with your hands to get it nice and pliable. Add a bit more cornstarch if the playdough is too soft. Add a bit more lotion or conditioner if it is too stiff.

Does Aldi have cloud bread? ›

You have to be relatively familiar with the kitchen, as it requires baking with separated egg yolks and whites, cream cheese, and other ingredients. Luckily for those without the skills (or the time!) to bake cloud bread every time you want a sandwich, Aldi has its own version that comes pre-made!

Is cloud bread bad for you? ›

Cloud bread has half the calories of a slice of bread and has few to no carbs. However, it's missing out on the nutrients and fiber found in whole-grain bread. Cloud bread is also high in saturated fat because it's made from full-fat dairy products.

Why did my cloud bread go flat? ›

If your cloud bread comes out runny or flat, it's because either the egg whites weren't stiff enough or you mixed too long and flattened the egg whites. The fluffy texture is all because of the egg whites. The most common issue people run into making cloud bread with Greek yogurt is that they're flat.

Why is my bread not fluffy enough? ›

One of the most common reasons for dense bread is over or under-kneaded dough. Kneading your dough directly affects gas production, as it increases the rate that fermentation occurs. Without kneading, bread dough will take much longer to ferment fully.

Why aren't my bread rolls fluffy? ›

Too much flour, or not the right kind, could be to blame. Dough made only from flour with a high or even average amount of protein (like bread flour or all-purpose flour) can become tough from overmixing.

Why is my milk bread not fluffy? ›

If your milk bread is dense, mostly likely, the dough is under-kneaded. The dough needs to develop enough gluten to expand and become soft and fluffy. A sure way to ensure that the dough is kneaded enough is using the window pane test.
