30 Lazy Vegan Recipes – Easy-peasy eats (1)

For everyone out there whose efforts at veganism are constantly thwarted by the need for quick, easy meals, these lazy vegan recipes are for you!

For a lot of people, the meals that spring to mind when time is short and you can’t be bothered to cook anything elaborate are not vegan.

Maybe your lazy dishes are omelette or mac n cheese.. Both of which are delicious, but not great if you’re cutting out dairy!

Well luckily, you’ve found Hurry The Food Up, where, as you can tell by the name, low-effort, time efficient cooking is pretty much our whole thing!

Lovely and lazy vegan recipes

We have gathered together 30 of the most easy-peasy quick vegan recipes, because sometimes elaborate cooking is the last thing you want to do – and that’s ok!

You can easily throw together some delicious, nutritious easy vegan meals, with minimal effort required.

Most of these lazy vegan recipes take under 30 minutes to make. If they take any longer, it’s because they require a few minutes prep and then a spell in the oven – making them very hands off!

We’ve got a mixture of hearty mains for speedy dinners and simple sweet treats for when the sugar craving hits!

Mains in minutes

It’s surprisingly easy to find quick vegan recipes for dinner that are as healthy as they are delicious (for quick vegetarian dinner ideas try these!).

Pasta dishes are, of course, a great option. Who knew there were so many vegan pasta sauces that aren’t just tomato based?

For example, this quick easy vegan meal of roasted red pepper pasta uses cashews to make a rich and creamy sauce that is ready in only 15 minutes.

Cashews are a useful ingredient in vegan cooking generally – you can use them to make creamy sauces like this one, cheese, cheesecake, milk and many other vegan alternatives.

Another great lazy vegan recipe is a traybake. These may take a bit longer to cook, but they are super low input. All you have to do is toss the ingredients in seasoning and whack them in the oven!

There are so many possible variations from a hearty butternut squash traybake, to a smoky BBQ tofu and veggie traybake.

It’s also worth mentioning the endless possibilities for lazy vegan recipes presented by the humble baked potato ( a great starter veganuary recipe is the good old baked potato).

Actually baking potatoes takes a long time, but pop them in the microwave and you’ve got a filling dinner ready in minutes.

Try our veggie king microwaved baked potato for inspiration!

Simple sweet treats!

Honestly, we think this is where lazy vegan recipes really come into their own.

Baking is a faff and if you want some sugary comfort food, it’s often not when you’re in the mood for all the mess and washing up that comes with making a cake.

Craving sugar late at night but have nothing in the house? Try a 2 ingredient peanut butter mug cake!

Fancy pancakes for breakfast this weekend, but can’t be bothered with frying each one individually and spending an hour washing up afterwards? Try baking your pancakes instead!

Or are you after a healthier snack – something to bring on a hike or eat post-workout maybe? Our 2 ingredient banana oat cookies will have you sorted in no time!

Lazy vegan desserts are a bit of a revelation!

So, we hope you enjoy discovering the easy side to veganism with 30 lazy vegan recipes.

Prep Time:10 minutes minutes

Cook Time:15 minutes minutes

Total Time:25 minutes minutes

Servings:12 cookies (roughly)

Author: HurryTheFoodUp

Ingredients

  • 2 ripe banana
  • 1 cup rolled oats (oatmeal or porridge oats work really well)

Optional:

  • 1 tsp cinnamon
  • 1 small handful raisins
  • 1 small handful walnuts (crumbled)
  • 1 small handful sesame seeds (toasted)

Instructions

  • Preheat the oven to 180°C (360°F)

  • Get a bowl and and mash the bananas until they’re mushy

  • Add the cup of oats and any of the optional ingredients

  • Stir until everything is nicely mixed

  • Put baking paper on the tray so the cookies don’t stick. If you don’t have that make sure to grease the baking tray with butter (or olive oil if you’re vegan)

  • To make the cookie shape just grab a spoon and scoop a decent amount from the mixture onto the baking tray like I did in the photo above. It’s super quick and easy.

  • Off it goes into the oven for about 15 – 20 minutes.

  • Done!

NOTES

Please note that the nutritional information below is for the bananas and oats only and does not include any of the optional ingredients.

EQUIPMENT: You just need a solid baking tray and some parchment paper, cool as.

Feel free to add any other toppings as you see fit!

IF YOU LIKED THIS RECIPE: This was quicker and easier than you thought, right? If you like that style then you need to check out the Banana Egg Pancakes (also just 2 ingredients) or these Cinnamon Baked Pears (3 ingredients). Good food can be so simple. And if you still can’t get enough of oats, then you should start making lots of overnight oats in a jar batches! We’re addicted to them already 🙂 Adapted from The Burlap Bag (brilliant recipe, thanks!!)
